Just about all the supermarkets, corner shops and peripteros in Larnaka seem to stock malt vinegar these days. soft brown sugar also readily available. But yes, you can in fact use any kind of sugar when you make tomato chutney; obviously if you use dark brown sugar you get a darker coloured chutney. But you can even use normal granulated sugar. If you want a darker colour, just caramelise a little of it!
