The French word chef can mean either "head", as in "head of a team" or "chef" as in "a cook in a restaurant". Chef de cuisine combines the two, i.e. "head chef".

Manager (boss) of a team can be "chef d'équipe" (team leader perhaps) or for a shop / store they seem to use the expression "directeur", or "directice" if female.

I think a cuisinier is a cook/chef (seems to be no difference in French, is there in English, why two words?) and the chef cuisinier or chef de cuisine is the one in charge so I suppose head chef. You would only have one chef in a cuisine.
