The 'force quit' is also available in the apple menu using your trackpad/cursor, simple click anywhere on the desktop (ie outside the current application window) this will return the finder to the front and you can then use your finger to click on the apple menu/force quit - select the application which is 'not responding' and click on Force Quit or hit retun on your keyboard - et voila!

If your 'other party' is also an apple user why not use 'Facetime' instead of Skype? In our experience we find it less of a problem with echos etc.

Not sure why you're getting the 'Spinning Beachball of Death' (SBOD) as they call it, but if you press cmd, alt and esc all together you will get a window where you will have the option to 'Force Quit' the non-responding program(s). Select the one that's giving you problems and then try relaunching it.
