Agree sanblasting is probaly the best way

It is very messy but sand blasting does the best job, if it's a room you are already using then a blow torch and scraper in a well ventilated room/face mask is the way to go, French paint as you probably know is not very good but you will probably find that beams would be covered in a lead based paint so if possible go for sand blasting and cover everything if is is a room you are already using.

There used to be a company that advetised on hear based near La Gouray/Plemmet that did sandblasting, the wife I think was called Julie Kirkham and it was called something like KC Sandblasting, they did a fabulous job on a whole house for some friends of ours but if they are still around, somebody might be able to post their contact details.
