French plaster is quite  porous and that's why they use a sous couche first, a lot of emulsions will simply lay on the surface and soak in, and re- the microporous paint, the beams don't need to breathe but you can use it just like any other paint, a lot of French decorators used to use the sous couche on plaster then a solvent based satin or gloss top coat.

If its French plaster, we find it very sof.

Have used Wickes Smooth exterior wall/masonary paint.  It seems to toughen the skin and does a good job.

If the wood is a few hundred years old you can just about paint it with anything, although it is a good idea to treat it all first with a timber treatment, some people wax their beams but dust will stick, you can use the lasure incolor which is clear, its a timber treatment as well, its available in either spirit based or acrylic versions, some people have been known to use creosote but one would highly advise against that, I treated my old timbers first then gave them a couple of coats of acrylic mat varnish, but if you want to paint them white then its timber treatment followed by a primer undercoat then top coat.
