In some ways the registration of a historic vehicle is easier than a more modern one, because they're not too fussy about things such as lights and mph speedometers (my 1950s classic car has an mph speedo and that's absolutely no problem at all).

When you finally go to the prefecture armed with your paperwork and forms, take a simple letter requesting that you want to register the vehicle with the mention "vehicule de collection" (or something like that... it's all explained on the websites above). Just a warning, if you register it on a regular carte grise, you will have to put ugly modern registration plates on the bike, rather than the historically more appropriate black ones.
