I used the school in Valbonne as well and Harry is very good.  I didn't know any French when I began the class and I thought in the beginning 'how is this possible' -  but he does a great job of explaining.  He really cares about his students.  His number is 06 01 40 88 89.   Good luck.

Its the valborock in valbonne, my other half used them and recommends.

There is a driving school in Valbonne with an English speaking instructor. I have some friends who speak very highly of them. Dont know their name but there cant be very many up there

This is a difficult one - for a start there are very few English speaking driving instructors in all of France, but a bigger problem is that the theory part of the test consists of multiple choice questions in French. They're quite tricky and you do need reasonably good French, as well as road/driving-specific vocabulary, in order to answer them.
