Hi there I had the same problem and I found out an insurance broker that sort that out he was honest and english speaker you should get in touch with him.

He is in Nice

You will probably find a French insurance company who will do it, although fewer will now than used to. Most are now toeing the line and will only issue cover for a month initially, by which time they expect it to be on French plates. But regardless of whether you CAN do it or not, does not make you legal;  French law, UK law and EU law all state very clearly that your car must be registered in the country where you live permanently.
