I would think your 'caisse' would be the best place to start as they will change you to the new regime, and tell you what paperwork you need.Have fun!

Thanks for your rapid and encouraging reply ESS. I will certainly be looking into this ASAP as my next payment is due at the end of March.

Do you know if I should speak with my "caisse" - CPAM (Menton, in my case) or with URSSAF, in Nice, who collect my payments.

Our investigations have indicated that as soon as you reach retirement age in the UK you do not have to contribute to the French authorities for your healthcare. You should therefore not pay the 8% now, and you will have exactly the same cover.
We have found the CMU and associated services very helpful, worth a visit to talk to them and confirm everything. Then do post here to let us know as we will be in your situation in a couple of years!
