I would also take pictures of any damage in case there's a dispute after you've fixed/replaced them.

Make a list of all the things that have been damaged, including the bill for the fridge , price it all and send him a registered letter with "accusé de réception" with  2 columns, one with his deposit and the other one with what you had to spend to put the flat back to normal, including cleaner's time etc.  Stick to the facts, don't mention that you suspect him to have sub-let the flat as, I gather, you have no way of provings it.  In my view, according to what you wrote, HE will owe you some money!!!
