Here is my receipt:

1st phase

- Wash the olives

- Prepare the container ideally a demijohn with 12 liter of water

- Add 600 grams of salt and make sure it dissolves as much as possible

- Add one lemon cut in 4 pieces

- Add the olives and leave them for 40 days. All the olives must be covered by the salty water.

 

2nd phase

- Drain and rinse the olives

- Prepare the container with 12 liter of water

- Add 600 grams of salt and make sure it dissolves as much as possible

- Add: rosemary, thyme, laurel, as much as you like (suggest quite a lot) and one lemon cut in 4 pieces on top

- 45 days later take the lemon away

- 15 days later the olives are ready.

- 60 days later they are ready and will last in the same salty water for at least 2 years.

Hi Sunny Sue

After many years of searching for the same answer, I came across this recipe, link below, it's absolutely simple & wonderful to use.

BTW I soaked them in water for 6 days to get rid of the bitterness, & then the same in salt, but they are still a bit bitter, that's how I like them.
