Yes, I agree with Stuart, Bouef pour bourgignon, in fact it is stewing beef, which is what steak pie should be made from. Add some kidney (rognons de porc are best), if you like a stronger flavour.

I find the cut the French call "paleron" excellent for slow cooking. A steak pie is really a slow-cooked beef stew in pastry - better to cook the filling first.

Boeuf pour bourguignon cut into small pieces with onions and any prefered spices,cook on slow heat for minimum of 4 hours until tender.
