oh also, if you take the last 4 ingredients of the marinade and mix them together you get a great rub for oven potatoes. Just slice potatoes into strips and place in plastic bag with some olive oil, spice rub and salt , shake and bake, and voila! a great side dish for the fajitas!!!

sorry it should read: 4-6 not 46 TBS fresh lime juice.

And TBS= tablespoon/tsp=teaspoon

Sure , here goes:

Grilled Skirt Steak for Fajitas:Prep time-30 min./grill & rest time 12-15 minutes

Trim off fat and silver skin from from 1.5-2 pound skirt steak.

Marinate steak in:

3 TBS olive oil, 3 TBS fresh lime juice, 2 TBS brown sugar, 1/2 tsp crushed red pepper flakes, 2 cloves garlic minced, 1/2 tsp sugar, 1/4 tsp chilli powder, 1/4 tsp cayenne and 1/8 tsp paprika

Put steak in shallow dish with marinade and let sit 30 minutes at room temperature. (Turn over after 15 minutes.)

Pre heat grill, when hot remove steak from marinade and season with salt and pepper. Place steak on grill, cover and cook until seared, 2-3 minutes.

Flip steak over, cover and cook another 2-3 minutes.

Transfer steak to sutting board, tent with foil and let steak rest 5-8 minutes before slicing.

Slice steak against the grain!!! You will have very long pieces so it is best to portion it into 2-3 chunks first then slice.

Sauces for the fajitas:

Chimichurri

in a food processor process: 4-5 cloves of garlic, 1/2 tsp red pepper flakes, ADD 2 bunches fresh parsley, including  stems,1/2 cup fresh oregano leaves, 4-6 TBS olive oil. 4-6 TBS wine vinigar, 46 TBSfresh lime juice, salt to taste and additonal oil, lime juice or water for thinning if needed.

Saute in a pan red, green and yellow pepeprs in olive oil.

Heat fajitas in oven-  Place platter of sliced meat, sauted peppers and sauce on table, assemble and enjoy!!
