First of all you should fix the source of humidity in order to stop further leeks. You should get a plumber first. If he needs to break your plasterboards, let him do it as your plasterboards need to be changed anyway. After water evacuation or leek is fixed you get a builder to change and paint plasterboards because existing ones will have stains of humidity and most likely they will be expended and it is irreversible.
